6月底,商業週刊1231期「台灣咖啡.飄香荷蘭」專文,介紹的咖啡正是歐舍參加世界咖啡之旅的盛事,2011年由世界咖啡競賽組織(WCE)舉辦的首屆「世界咖啡之旅」,於荷蘭馬斯陲特斯舉辦,全球計有16家烘豆商入圍,歐舍為亞洲唯一入選者,感謝商業週刊的報導,本款配方豆以CoE得獎莊園為主,細膩甜香,帶濃郁的焦糖、葡萄柚、巧克力甜,特別限量供應!請參考商業週刊專文:



荷蘭Maastricht(馬斯垂克)剛結束的五大項世界咖啡大賽,系由WCE組織主辦,今年同時舉辦首屆「世界咖啡之旅」,已票選並邀請全球19家自烘店提供一款優質豆參加本項盛事,亞洲區由歐舍咖啡榮獲入選。 您或許已經知道,包括WBC與世界拉花大賽等6大世界盃,自2011年起已整合為World Coffee Events,簡稱(WCE),除了6月在哥倫比亞結束的WBC外,2011年其餘的5大世界盃,都在Maastricht(馬斯垂克)舉辦完畢,WCE首屆的「世界咖啡之旅」,在當地掀起盛況,以下為WCE為首屆世界咖啡之旅設計的精美海報包括了最後參加的全球16家精品烘豆商的logo,以及同時舉辦5大咖啡世界盃的競賽logo:



歐舍咖啡也邀請全台11家優秀的同業同時舉辦WCT咖啡台灣之旅,這個活動已經在本月初圓滿結束,但仍有很多饕客向隅,加上商周的報導,因此我們決定推出本款WCT配方豆。
歐舍WCT用豆有兩大緣由:
第一,僅用歐舍「直接關係」莊園豆
以歐舍直接採購的莊園豆為主,這種直接赴莊園採購的模式,我們稱為「歐舍直接關係咖啡」,不透過傳統的貿易商與中間商,直接赴莊園杯測挑選優質好豆,如果挑上的批次榮獲該國競標優勝,例如CoE大賽,我們也會想辦法以高價競標下來,「直接關係」模式,鼓勵了咖啡農,也讓消費者有完整的生產履歷介紹,不僅喝好咖啡,也有直接管情連結。

第二,必須達到杯團隊對WCT風味的訴求,也就是「葡萄柚、花香、焦糖、乾淨的整體感」。
整合以上兩大訴求,團隊在創意總監美娟姐在領下,終於用以下參款豆配出這個迷人且餘味不絕的WCT優質配方。

以下是歐舍WCT用豆,第一款配方豆的介紹:
瓜地馬拉2010CoE第8名恰拉巴莊園

恰拉巴莊園是2010年瓜國CoE全國咖啡大賽的Top 8得獎莊園,原文名是:Finca Chalabal,在Acatenango(阿卡提蘭夠)區的優質莊園,歐舍杯測師在2008年就拜訪這個莊園且建立直接管道。
Chalabal莊園,位於本區的Rivers Quiquiya與 Pachut兩條河流邊,海拔高達1780公尺以上,由Julio Garcia Soto經營的家族莊園。
Julio Garcia Soto是第3代經營者,在獲悉歐舍獨家標購這批得獎豆後,他很高興的寫了一封mail給我們,提及「直接銷售關係」的構想,這其實就跟歐舍的「直接關係咖啡」是完全一致的觀念,他希望莊園的優質豆,都能直接銷售給國外識貨的烘豆商,而這也是我們一直在做在推廣的觀念。
Chalabal莊園由栽種到溼處理都可以自給自且足維持一貫作業,後段在日照充分時採天然日曬,遇到陰雨則採機器烘乾。目前莊園年產1650袋的生豆,大約分5個生產批次,本批得獎豆,則由2010年最優的批次中,再精篩出的精華。

WCT第二款配方為「薩爾瓦多拉夢特麗達莊園」:
她是薩國全國咖啡大賽多次的得獎優勝莊園,以大顆種的Pacamara聞名,我們亦拜訪過這個莊園,同時獲悉她榮獲2010年的CoE季軍,歐舍邀請日本的精品烘豆商,聯手標下這個優異批次,並作為配方中濃郁油脂感與焦糖甜、熱帶葡萄柚的風味來源。以下為莊園簡單的英文介紹:
Antonio René Aguilar Lemus inherited La Montañita during the 1980´s from his father, also named Antonio René, who had owned the farm for more than 65 years. With a little bit of imagination and a big concern about the quality of the coffee, his father built a wet mill to process the beans into the parchment stage. By purchasing a pulping machine and building fermentation tank with classification canals for a better separation of coffee by type he started the road to excellence. Antonio has participated in the previous years with other varieties of coffee in the Cup of Excellence program, becoming one of the small producers that promote the benefits of the contest among his neighbors in his department. This farm has always demonstrate it quality in COE, past year 2009, he was ranked 27, In 2006, in 14th, in 2005, he ranked 2nd, in 2004 won 15th place.
Chalatenango department where La Montañita is located is well known for excellent weather conditions allowing the bean to obtain remarkable flavors. It is also a place considered sanctuary of many animal species; therefore, Antonio does not allow hunting on the property. Antonio does not use herbicides and performs weed control manually. He uses organic fertilizers such as chicken manure, coffee pulp and counts on nature for insect control. Antonio and his wife have four daughters and have provided well for them. Although Antonio only finished elementary school, he has always made sure his four daughters stayed in school and continue studding.

第三款用豆來自來自大名鼎鼎的霧谷合作社,東非洲衣索匹亞的Yirgacheffe產區,Misty Vally Coop. Yirgacheffe,是2010最新採收期最優的小批次。取花香與帶勃艮地細膩的紅酒風味,2006年起,歐舍拜訪此區與合作社多達4次,直接關係採購的優良批次,已讓台灣饕客讚嘆不已。
Misty Valley Coop.主要採區在Gedeo,海拔約1,940公尺的高山區,其實合作社員都遍佈附近,但因為霧谷的知名度近年來爆增,以櫻桃的狀況與杯測的分數來敲定售價也實行了數年,也就是按品質分級出售。
Misty Valley的會員有加入且接受.認證,這些被認證的會員,也加入Fair trade組織,因此屬公平貿易認證批次,會員們咖啡園平均分佈於海拔1,850-2,100公尺左右.在這個高海拔的產區生產的咖啡豆,由於海拔高成長速度緩慢,讓我們在杯測時發現了他獨特且迷人的香氣。以下為霧谷的簡介:

As you know, the World Coffee Events (WCE) organization is putting on 5 world coffee competitions to take place at the SCAE World of Coffee Event in Maastricht, The Netherlands, June 22-24, 2011. They include the Brewers Cup, Cup Tasters, Latte Art, Coffee in Good Spirits and Ibrik.

We are have been working hand-in-hand with the local SCAE Dutch Chapter. They have been putting in countless amount of hours trying to make Maastricht a wonderful experience for the worldwide barista and coffee community.

One of their programs is the World Coffee Tour, where they would like to feature world-class coffees at local cafes in Maastricht. They would feature these coffee "hot spots" on a map, given out onsite at the event. In support of the program, the WCE is sending the information along to some of our roaster friends.
